Turkey (Chicken) and Cilantro Bites

These bites are super easy and really low carbs. Shown are 12 larger “bites”, make any size you wish. The dipping sauce has a bit of tang and goes really well with the bites.

Ingredients

Dipping Sauce:

  • 2 TBSP soy sauce 1 CHO/TBSP 2 CHO
  • 2 TBSP rice vinegar not seasoned 0 CHO
  • TOAL CHO 2 CHO
  • TOTAL VOLUME 4 TBSP
  • CHO/1/2 TBSP = .5 CHO

“Bites”:

  • 1.1 lb (500 gr) ground lean chicken or turkey 0 CHO
  • 1 egg 0 CHO
  • 1/4 cup (7 gr) finely chopped fresh cilantro. 0 CHO
  • 2 TBSP Chives (6 gr) finely chopped 0 CHO
  • ½ tsp Salt 0 CHO
  • ¼ tsp. Pepper 0 CHO
  • 1 TBSP Cornstarch 7 CHO/1 TBSP/8 GR. 7 CHO

TOTAL CHO 7 CHO

  • TOTAL WEIGHT 572 GRAMS
  • 7 CHO DIVIDED BY 572 GRAMS = .012 CHO/GRAM
  • EACH BITE BEFORE COOKED 47 GRAMS
  • EACH BITE AFTER COOKED 30 GRAMS
  • .012 CHO x 30 GRAMS = .36 CHO EACH

Instructions

  1. Mix all ingredients, these are very soft and sticky so beware. Line cooking sheet with parchment paper and form 12 balls as best you can. 47 grams each or smaller if you prefer, just adjust CHO/each bite and baking time. Bake for 35 minutes at 350.
  2. Serve with green lettuce leaves, and vegetables as part of an appetizer or with stir fried vegetables for more of a meal.
