Tuna Salad

Lunch is a pretty casual affair for the most part. Tuna is a staple, whether it’s on rice cakes, bread or part of a salad. Here we’ve dressed it up with avocado and olives on a very hot summer day.

Ingredients

  • 1 can Ocean’s Solid White Albacore Tuna 0 CHO
  • 1/3 cup Hellman’s Regular mayonnaise 0 CHO
  • 8 Unico green olives pimento stuffed 0 CHO
  • ½ TBSP chives diced 0 CHO
  • 1 Avocado (100 gr) peeled and halved 2 CHO

TOTAL CHO 2 CHO

  • Bread CHO will Vary
  • Greens 0 CHO
  • Garnish with Tomatoes

Instructions

  1. Cut the Avocado in half with a paring knife, remove pit and with a spoon remove flesh from the skin.
  2. Drain tuna and mix with mayonnaise. Finely dice olives and chives. Stir into tuna mixture. Place half of tuna mixture in each avocado cup.
  3. Serve with bread or as part of a salad. Garnish with tomatoes if desired.
