Tuna Salad
Lunch is a pretty casual affair for the most part. Tuna is a staple, whether it’s on rice cakes, bread or part of a salad. Here we’ve dressed it up with avocado and olives on a very hot summer day.
Ingredients
- 1 can Ocean’s Solid White Albacore Tuna 0 CHO
- 1/3 cup Hellman’s Regular mayonnaise 0 CHO
- 8 Unico green olives pimento stuffed 0 CHO
- ½ TBSP chives diced 0 CHO
- 1 Avocado (100 gr) peeled and halved 2 CHO
TOTAL CHO 2 CHO
- Bread CHO will Vary
- Greens 0 CHO
- Garnish with Tomatoes
Instructions
- Cut the Avocado in half with a paring knife, remove pit and with a spoon remove flesh from the skin.
- Drain tuna and mix with mayonnaise. Finely dice olives and chives. Stir into tuna mixture. Place half of tuna mixture in each avocado cup.
- Serve with bread or as part of a salad. Garnish with tomatoes if desired.
