Fresh ripe tomatoes with Feta Cheese and Avocado definitely tastes like summer. Serve with just about anything grilled.
Ingredients
5 (400 gr) medium tomatoes 10 CHO
- 1 TBSP (10 gr) Shallot, finely diced 2 CHO
- 1 medium 175 gr Avocado (after cored and skin removed) 3 CHO
- 1 tsp. Lime juice 0 CHO
- ¼ tsp salt 0 CHO
- ¼ tsp pepper 0 CHO
- ¼ tsp cumin 0 CHO
- 2 TBSP Fresh oregano chopped 0 CHO
- 3 oz. (90 gr) Feta cheese 0 CHO
- Oregano sprigs and fresh lime wedges for garnish 0 CHO
TOTAL CHO TOMATOES 10 CHO
- 10 CHO DIVIDED BY 5 TOMATOES = 2 CHO
- EACH TOMATO HALF 1 CHO
TOTAL CHO AVOCADO SALSA 5 CHO
- TOTAL WEIGHT 185 GRAMS
- 5 CHO DIVIDED BY 185 GRAMS = .027 CHO/GRAM
- 1 TBSP = 18 GRAMS (.027 CHO x 18 GRAMS) .486 CHO/TBSP
EACH TOMATO HALF + AVOCADO SALSA = 1.486 CHO EACH
Instructions
- Core tomatoes, cut in half and place cut side up on a platter.
- In a small bowl, dice avocado and gently mix with salt, pepper, and cumin. Add lime juice, taste and set aside.
- Sprinkle fresh chopped oregano on tomatoes. Top each tomato with 1 TBSP avocado salsa. Crumble cheese over tomatoes and avocado. Garnish with oregano sprigs.
