Summer Solstice

Winter and Summer Solstice occur at the same time around the world; it just depends on what side of the equator you are on.

Today we are celebrating the Summer Solstice, the longest day of the year.  Tomorrow the days will start to get shorter until Winter Solstice, and then they will start to get longer again.

Tradition says celebrations can be traced back to Ancient Egyptian Times, honoring the sun.  The celebration centered around a bonfire – a symbol for the sun and it was believed the livelier the dance, the better the harvest would be.  It was/is a time for community to gather.  Around the world the Solstices are celebrated from flowers and festivals to feasts.

Make summer inspired food, colorful, round in shape in reference to the sun, grilled in reference to the bonfire and decorate with flowers and lights.

Slice oranges; drizzle a little of the best olive oil you can find and garnish with mint for a perfect simple salad full of flavor.  Or try:
