Chicken Souvlaki

Souvlaki literally means “meat on a stick” and is made with chunks of marinated meat. It is generally served with Tzatziki, in a pita as “fast food” or as part of a meal with Greek Potatoes or Rice. We always have Hummus with Tzatziki, another Mediterranean and Middle Eastern side dish. A gyro (pronounced close to hero, only more like “yero”, is meat cooked on a vertical rotisserie; then shaved off and eaten in a pita with pretty much the same accompaniments. This very simple marinade works well with chicken, pork or lamb.

Ingredients

  • 2 (300 gr) chicken breasts cut into cubes 0 CHO
  • ¼ cup olive oil 0 CHO
  • 2 TBSP lemon juice 0 CHO
  • ½ tsp. Dried oregano 0 CHO
  • ¼ tsp. Minced garlic 0 CHO
  • Salt and pepper 0 CHO

TOTAL CHO 0 CHO

    Instructions

    1. Cover 4 – 6 wooden skewers with water in a flat dish and leave to soak for 30 minutes.
    2. Cut chicken into cubes and mix marinade. Pour marinade over chicken and toss. Leave at room temperature for 15 minutes and then skewer. Heat grill and cook until juices run clear.
    3. Serve with any of the accompaniments you prefer. Tzatziki, Hummus, Greek Salad, Pita Pockets, Greek Potatoes, Greek Rice, Tortilla Chips (Gluten Free).
