Sloppy Joe’s – Southwestern

The original Sloppy Joe is made with tomato sauce and ground beef and Worcestershire Sauce.  This is a Southwestern take on Sloppy Joe’s using ground chicken or turkey.  It is still a little spicy with tons of flavour.

Sloppy Joe’s - Southwestern

 The girls prefer less spice, so we make two batches, one for the adults and one for the kids (recipes below). Invite some friends over and have some fun. It freezes well. Serve on a bun or with tortilla chips (CHO will depend on what you choose) and sliced avocado. We’ve carb counted this recipe with and without the corn.

Ingredients

Sloppy Joe’s Without Corn

  • 1 TBSP Avocado or Olive oil 0 CHO
  • ¼ cup (30 grams) diced onion 2.5 CHO
  • 1 cup (120 grams) chopped red pepper 6 CHO
  • 1.1 lb (500 grams) ground turkey or chicken 0 CHO
  • 1 - 6 oz. (156 gram) can Hunt’s Tomato Paste (3 CHO/2 TBSP or 30 ml) 15.6 CHO
  • 2 cups (500 ml) chicken broth 0 CHO
  • 2 tsp. chili powder 0 CHO
  • 1 tsp. cumin 0 CHO
  • ½ tsp. cayenne pepper 0 CHO
  • ¼ tsp. red pepper flakes 0 CHO
  • 1 tsp salt 0 CHO
  • Cilantro and Avocado for garnish

TOTAL CHO 24.1 CHO

  • TOTAL WEIGHT 800 GRAMS
  • 24.1 DIVIDED BY 800 GRAMS = .030 CHO/GRAM
  • 1 TBSP = 17 GRAMS (.030 x 17 GRAMS) .51 CHO/TBSP
  • ¼ CUP = 4 TBSP (.51 x 4) 2.04 CHO/1/4 CUP
  • ¼ CUP – 68 GRAMS

Sloppy Joe’s With Corn

  • Add ½ cup (80 gr) Green Giant Peaches and Cream Niblets (12 CHO/drained ½ cup/125 ml)

TOTAL CHO 36.1 CHO

  • TOTAL WEIGHT 873 GRAMS
  • 36.1 DIVIDED BY 873 GRAMS = .041 CHO/GRAM
  • 1 TBSP = 15 GRAMS (.041 x 15 GRAMS) .615 CHO/TBSP
  • ¼ CUP = 4 TBSP (.615 CHO x 4) 2.46 CHO/1/4 CUP
  • ¼ CUP = 60 GRAMS

Instructions

  1. This comes together really quickly so chop onion and peppers before starting.

  2. Heat oil in skillet. Add meat and scramble fry, breaking up as it cooks, for 3 minutes. Then add onion and bell peppers.

  3. Cook for 5 minutes and let some of the juices cook down. Add tomato paste, stir to incorporate and add spices.

  4. Next add chicken broth, bring to a boil, reduce heat to medium and simmer uncovered for 30 minutes, stirring occasionally.

  5. Child Friendly Sloppy Joe’s

    Make recipe according to above, except for the spices. Add only 1 tsp. salt, 2 tsp. cumin and ½ tsp. paprika. The girls love it!  CHO will be the same as above recipes.
