Shrimp Scampi

I love this retro dish. The girls love shrimp, so this is an easy start to a meal or alongside Simple Tomato Sauce. In North America shrimp scampi means shrimp cooked in garlic butter. In Italy scampi is more like a lobster. Everyone has their own way of making scampi. Double everything but the shrimp if you want lots of sauce to dip fresh bread.

Ingredients

  • 12 large Shrimp 205 gr 0 CHO
  • 1 TBSP butter 0 CHO
  • 1 TBSP olive oil 0 CHO
  • ½ tsp. minced garlic 0 CHO
  • 1/8 tsp. salt 0 CHO
  • 1 TBSP (juice of half a lemon) lemon juice 0 CHO
  • 2 TBSP fresh parsley chopped 0 CHO
  • Lemon slices for garnish 0 CHO

TOTAL CHO 0 CHO

    *Bread if desired, CHO depends on product you buy

      Instructions

      1. Melt butter and olive oil. Add minced garlic. Heat the sauce pan on the stove top or grill.
      2. Add shrimp to hot butter mixture and sprinkle with salt. Cook for about 2 minutes.
      3. Shrimp will be starting to turn pink. Flip shrimp and sprinkle parsley on top. Cook about another 2 – 3 minutes, add lemon juice and remove from heat. Shrimp should be fully pink in color.
      4. Garnish with lemon slices and serve immediately, with fresh bread if desired.
