I love this retro dish. The girls love shrimp, so this is an easy start to a meal or alongside Simple Tomato Sauce. In North America shrimp scampi means shrimp cooked in garlic butter. In Italy scampi is more like a lobster. Everyone has their own way of making scampi. Double everything but the shrimp if you want lots of sauce to dip fresh bread.

Ingredients
12large Shrimp205 gr 0 CHO
1TBSPbutter 0 CHO
1TBSPolive oil 0 CHO
½tsp.minced garlic 0 CHO
1/8tsp.salt 0 CHO
1TBSP(juice of half a lemon) lemon juice 0 CHO
2TBSPfresh parsleychopped 0 CHO
Lemon slices for garnish 0 CHO

Instructions
Melt butter and olive oil. Add minced garlic. Heat the sauce pan on the stove top or grill.
Add shrimp to hot butter mixture and sprinkle with salt. Cook for about 2 minutes.
Shrimp will be starting to turn pink. Flip shrimp and sprinkle parsley on top. Cook about another 2 – 3 minutes, add lemon juice and remove from heat. Shrimp should be fully pink in color.
Garnish with lemon slices and serve immediately, with fresh bread if desired.
