Shrimp Salad Sandwich

Very similar to Shrimp Louie Salad, our Shrimp Salad Sandwich is tossed with homemade Thousand Island Dressing and loaded onto a bagel or croissant. Other times, we make a salad. Regardless, it is delicious. The Thousand Island Dressing is a bit sweeter than just using mayonnaise.

Shrimp Salad Sandwich

This makes 4 open faced sandwiches for us or 4 individual salads. A true Shrimp Louie Salad will also have tomatoes, avocado, and hard-boiled eggs.

Ingredients

  • 8 oz (227 gr) cooked shrimp, tail removed 0 CHO
  • 1 recipe Thousand Island Dressing 17 CHO
  • ½ cup (55 gr) celery 1 CHO
  • Cucumber radish, and olives to garnish 0 CHO
  • Lemon wedges 0 CHO
  • Lettuce shredded 0 CHO

TOTAL CHO 18 CHO

    *BREAD PRODUCT IN ADDITION TO SHRIMP SALAD

    • TOTAL WEIGHT 442 GRAMS
    • 18 CHO DIVIDED BY 442 GRAMS = .04 CHO/GRAM
    • ½ CUP = 110 GRAMS (.04 CHO x 110 GRAMS) 4.4 CHO/1/2 CUP

    Instructions

    1. Bring salted water to a boil and add shrimp. Return water to a boil and cook 1 minute until shrimp turns pink. Drain in a sieve and gently run cold water over the shrimp until cool to touch.
    2. Remove tails, blot on paper towel, cover and refrigerate until ready to use.
    3. Prepare Thousand Island Dressing and refrigerate until ready to use.
    4. When ready to serve, roughly chop shrimp and toss with Thousand Island Dressing and chopped celery.
    5. Toast bagels or slice croissants if using and garnish as desired.
    6. If making a salad tear lettuce and place ½ cup shrimp mixture on the lettuce and garnish as desired.
