Instructions
Bring salted water to a boil and add shrimp. Return water to a boil and cook 1 minute until shrimp turns pink. Drain in a sieve and gently run cold water over the shrimp until cool to touch.
Remove tails, blot on paper towel, cover and refrigerate until ready to use.
Prepare Thousand Island Dressing and refrigerate until ready to use.
When ready to serve, roughly chop shrimp and toss with Thousand Island Dressing and chopped celery.
Toast bagels or slice croissants if using and garnish as desired.
If making a salad tear lettuce and place ½ cup shrimp mixture on the lettuce and garnish as desired.
