Brown Butter Scallops on top of Romesco Sauce is purely elegant dining, and is so very easy. Rich creamy sea scallops on top of a fire-roasted tomato base.
Romesco is not intended to be a fiery condiment but you can add more red pepper flakes or cayenne if you want.
Brown Butter Scallops With Romesco Sauce
Both home-made and purchased Romesco Sauce have similar CHO.
There are almonds in the original recipe from Spain, but Sunflower Seeds, Pumpkin Seeds or cauliflower can be nut free replacements.
Scallops are so sweet and gentle in flavour, you want to be careful with any additions, except butter, salt and pepper.

- 3 – 4 scallops per person
- ¼ cup Romesco Sauce per person
Instructions
- Make Romesco earlier in the day or the day before. Warm just prior to serving.
- Prepare Scallops as per Brown Butter Scallops Recipe. Place scallops on Romesco and serve immediately.
