Sautéed Spinach

This is a great vegetable side dish. Some recipes call for a lot of added garlic and red pepper flakes. We like the mild flavor of a very simple sauté. There are practically no carbs in spinach so eat away!

Ingredients

  • Serves 1 – 2
  • 8 cups (110 gr) fresh spinach 2 CHO
  • 1 garlic clove peeled 0 CHO
  • 1 TBSP olive oil 0 CHO

TOTAL CHO 2 CHO

    Instructions

    1. Add oil to medium/large frying pan. Toss in whole garlic clove and heat. Add spinach and stir with tongs until wilted to the degree you prefer.
    2. Remove garlic clove and serve with salt and pepper on the side.

      A sprinkle of pine nuts to garnish has literally no CHO
