Oregano Shrimp

At first glance, this dish resembles Scampi, however, the oregano, red pepper flakes and lemon zest point it more toward Greece than Italy. A very simple appetizer; this recipe seems to appear whenever we have any leftover Tzatziki. Grill or pre heat the oven. Use skewers or a grilling pan. Anything works!

Oregano Shrimp

0 Carbs, except for the Tzatziki so enjoy as many as you want!

Ingredients

  • ½ lb 10-12 large Shrimp
  • 2 TBSP Olive oil
  • ¼ tsp. garlic minced
  • ¼ tsp. Sea salt
  • ¼ tsp. Pepper
  • 1 tsp dry oregano or 1 TBSP fresh finely chopped
  • 1 tsp fine lemon zest
  • ¼ tsp red pepper flakes
  • Parsley to garnish
  • Lemon wedges to garnish

Instructions

  1. Soak skewers (if using) for 30 minutes and fire up the grill or pre heat the oven to 400.
  2. Combine all ingredients, except parsley and lemon wedges in a Ziplock bag. Marinate 10 minutes.
  3. Remove shrimp from marinade and skewer or place in the grilling pan.
  4. Cook until pink on bottom/heat side – about 3 minutes, flip and cook another 3 minutes, until just pink through.
  5. Garnish with fresh parsley and lemon wedges.
  6. Serve immediately with Tzatziki and fresh vegetables.
