Oregano Shrimp
0 Carbs, except for the Tzatziki so enjoy as many as you want!

dry oregano or 1 TBSP fresh
finely chopped

fine lemon zest

red pepper flakes

Parsley to garnish

Lemon wedges to garnish

Soak skewers (if using) for 30 minutes and fire up the grill or pre heat the oven to 400.

Combine all ingredients, except parsley and lemon wedges in a Ziplock bag. Marinate 10 minutes.

Remove shrimp from marinade and skewer or place in the grilling pan.

Cook until pink on bottom/heat side – about 3 minutes, flip and cook another 3 minutes, until just pink through.

Garnish with fresh parsley and lemon wedges.

Serve immediately with Tzatziki and fresh vegetables.
