Black Beans are native to Latin American cuisine and have been introduced around the world. The most common, the Black Turtle Bean is small and gets its name from the harder, outer shell.
Mexican Black Bean Chili
Low in Carbs, this spicy Chili can be heated up or toned down depending on your group.
We use a single batch of Taco Seasoning spices to add the extra flavour (but adjust the water for this recipe).
Great for those build your own style meals, serve with taco chips, in a tortilla as a taco, inside butter lettuce as a wrap or over rice.
Ingredients
- 1 lb. (454 gr) ground meat, turkey, chicken, beef 0 CHO
- 1 TBSP olive oil 0 CHO
- ½ cup (60 gr) red onion, chopped 5 CHO
- 1/3 cup (60 gr) jalapeno, chopped 5 CHO
- 1 recipe Taco Seasoning 0 CHO
- 398 ml can whole tomatoes with juice chopped (6 CHO/1/2 CUP/125 ML) 19.1 CHO
- ½ cup water 0 CHO
- 1 cup (180 gr), black beans, rinsed and drained 18 CHO

- 47.1 CHO DIVIDED BY 867 GRAMS = .054 CGO/GRAM
- ¼ CUP = 38 GRAMS (.054 CHO x 38 GRAMS) 2.05 CHO/1/4 CUP
- ½ CUP = 75 GRAMS (.054 CHO x 75 GRAMS) 4.05 CHO/1/2 CUP
CONDIMENTS: CHO DEPENDENT ON SERVING SIZE
- Sour cream
- Cilantro
- Green onions chopped
- Avocado chopped
- Hot sauce of choice
- Feta crumbled
- Gouda or cheddar grated
- Lettuce shredded
- Taco chips
- Tortillas warmed
- Butter lettuce
- Rice
Instructions
- Place Taco Seasoning spices in a small dish and set aside.
- Heat oil in a large skillet and scramble fry ground meat until cooked halfway through.
- Add onions and jalapeno and continue to cook through.
- Sprinkle Taco Seasoning, water and chopped tomatoes. Stir and bring to a vigorous simmer. Simmer uncovered for 20 minutes until liquid is almost absorbed.
- Add drained black beans, stir, and serve with any condiments you wish.
