Boneless Pork Chops are approached a little differently than the usual in this casual summer meal. A quick marinade in olive oil, red wine vinegar and herbs before grilling on high heat brings out the best flavours!
Marinated Pork Chop Cubes
It is easy enough to make Pork Chop Skewers or cook the cubes in a hot grill grate, it just depends on the time you have. Hot summer days scream for easy, quick meals.
This is a great accompaniment to left over Hummus, Tzatziki and Bruschetta if you have any on hand. Otherwise, Greek Salad with Chickpeas and Baby Greens, or a Greek Salad and maybe some rice rounds out a more substantial meal.
There are no Carbs in the Pork Chops!
Ingredients
- 2 boneless pork chops
- 2 TBSP olive oil
- 1 TBSP Red Wine Vinegar
- 1 TBSP fresh parsley chopped
- ¼ tsp. salt
- ¼ tsp. pepper
Instructions
- Pre heat grill to 450.
- If using skewers, place them in water for about 30 minutes before grilling.
- Trim fat from pork and cut into 1-inch pieces.
- Mix marinade ingredients in a flat pasta style dish. Add pork and toss to cover. Marinate 15 – 20 minutes only. The red wine vinegar will break down the small pieces of pork if left too long. Toss occasionally throughout the 15 – 20 minutes.
- Place grill grate on barbeque after spraying with olive oil cooking spray. Heat for a couple minutes and add pork cubes. Discard any remaining marinade.
- Grill pork 3 minutes and flip. Grill 3 more minutes. Pork should be cooked through if cut into 1-inch cubes. Otherwise gauge your pieces and add grill time as needed.
- Remove cubes from grill and let rest 3 minutes before serving.
