Dessert Cups

If you find fresh dessert cups, this is a quick and easy dessert, whether you plate them or let guests do their own!  Locally grown and young strawberries make the dessert……actually any spring or summer berry/fruit works!

Assemble in minutes, and very low Carb if you skip the ice cream, which may be hard to do on a hot day!

Ingredients

Dessert Cups (11 CHO each)

  • Strawberries (3 medium /55gr = 3 CHO)
  • Blueberries (10 medium/15 gr = 2 CHO)
  • Raspberries (6 medium/30 gr = 1 CHO)
  • Cherries (4 medium/44 gr = 6 CHO)
  • Peaches (¼ medium/30 gr = 3 CHO)
  • Canned Whipping Cream (.75 CHO/TBSP)
  • Traditional Whipped Cream (.07 CHO/GR or .65 CHO/TBSP)
  • Swedish Cream (1 TBSP/10 gr = 1.14 CHO)
  • Garnish with mint if desired.

Instructions

  1. Make Traditional Whipped Cream or Swedish Cream earlier and refrigerate.

  2. Wash and air-dry berries/fruit earlier in the day and refrigerate.
  3. Let guests assemble and enjoy the hot days of summer!
