Crispy Noodles

This recipe from Gramma Rose is decades old. Make or buy the best dry pasta you can find. Gluten Free pasta is somewhat different but just as good, especially topped with sour cream and/or Parmesan Cheese.

Crispy Noodles

We all eat a lot of pasta; especially the girls. Generally, we count 15 Carbs per ½ cup cooked. The only other Carbs in this dish is the sour cream, if using.

Ingredients

250-gram pasta nests (6) 15 CHO/1/2 CUP

  • 1 TBSP coarse salt
  • 2 TBSP butter
  • Parmesan Cheese grated
  • Sour Cream 1 CHO/TBSP
  • 1 TBSP fresh chives or parsley to garnish
  • Pepper to taste

Instructions

  1. Bring large pot of water and the salt to a boil.
  2. Meanwhile, melt butter in a medium skillet. Take 1 dry pasta nest and crumble into smaller pieces. Add to the butter and stir frequently until dry pasta is golden brown in color, as is the butter.
  3. Drain cooked pasta and toss with butter and crispy noodles.
  4. Sprinkle with fresh herbs and pepper. Serve immediately with sides of sour cream and/or grated Parmesan Cheese, if desired.
