Thanks to cousin Trisha for the recipe! This is so good, whether you have leftover roasted chicken/turkey or cook a breast or two. Perfect in butter lettuce as a wrap or in a croissant. Chicken or Turkey Salad Sandwiches were created in a Rhode Island meat shop, that soon became a deli!
Chicken or Turkey Salad
Depending on whether you can find gluten free cashews, we have carb counted one recipe with cashews and one with GF pistachios (the difference was less than one carb in the whole recipe). The cashew recipe came out the winner if choosing, however, both were really good.
Ingredients
Cashew:
- 1 cup (150 gr) chicken/turkey (one chicken breast) chopped 0 CHO
- ½ cup (55 gr) celery chopped 1 CHO
- 2 TBSP (25 gr) (3 large) seedless grapes cut into 4 or 6 pieces 5 CHO
- 2 TBSP (20 gr) cashews roughly chopped 4.4 CHO
- 2 TBSP (30 gr) Hellman’s Regular Mayonnaise 0 CHO
- ½ tsp. chives finely diced 0 CHO
- ½ tsp. lemon juice 0 CHO
- Salt and pepper to taste 0 CHO
TOTAL CHO 10.4 CHO
- TOTAL WEIGHT 275 GRAMS
- 10.4 CHO DIVIDED BY 275 GRAMS = .037 CHO/GRAM
- ¼ CUP = 35 GRAMS (.037 CHO x 35 GRAMS) 1.29 CHO/1/4 CUP
Pistachio:
- 1½ cups (175 gr) chicken/turkey (one chicken breast) chopped 0 CHO
- ½ cup (55 gr) celery chopped 1 CHO
- 2 TBSP (25 gr) (3 large) seedless grapes cut into 4 or 6 pieces 5 CHO
- 2.5 TBSP (20 gr) pistachios roughly chopped 3.6 CHO
- 2 TBSP (30 gr) Hellman’s Regular Mayonnaise 0 CHO
- ½ tsp. chives finely diced 0 CHO
- ½ tsp. lemon juice 0 CHO
- Salt and pepper to taste 0 CHO
TOTAL CHO 9.6 CHO
- TOTAL WEIGHT 275 GRAMS
- 9.6 CHO DIVIDED BY 275 GRAMS = .034 CHO/GRAM
- ¼ CUP = 35 GRAMS (.034 CHO x 35 GRAMS) 1.19 CHO/1/4 CUP
Butter Lettuce 0 CHO
- Croissants – will depend on product and amount eaten
Instructions
- Chop chicken and celery and place in small dish. Roughly chop nuts and slice grapes into 4 or 6 pieces. Add diced chives and remaining ingredients. Gently stir and test for seasoning. Will last up to an hour refrigerated before serving; or put in the cooler and head off on a play date for a picnic!
