Buffalo Dip
This dip is perfect with leftover turkey or chicken and definitely finds its way to every Super Bowl Party. A bit tangy from the Frank’s Hot Sauce and so delicious, a combination of Kevin and Jen’s standby recipe. We half a single recipe to accommodate both blue cheese and ranch lovers. Renee’s GF Blue Cheese has 0 CHO, while Renee’s and Hidden Valley GF Ranch dressings have 1 CHO/TBSP. Both counts are listed below.
Ingredients
Blue Cheese
- 1 cup (130 gr) chopped cooked chicken or turkey 0 CHO
- ½ cup (115 gr) cream cheese 7.5 CHO
- ¼ cup (65 gr) Frank’s Hot Sauce 0 CHO
- ¼ cup (57 gr) Renee’s GF Blue Cheese dressing 0 CHO
- ½ cup (37 gr) grated cheddar cheese 0 CHO
TOTAL CHO 7.5 CHO
- TOTAL WEIGHT 382 GRAMS
- 7.5 CHO DIVIDED BY 382 GRAMS = .019 CHO/GRAM
- 1 TBSP = 17 GRAMS (.019 CHO x 17 GRAMS) .323 CHO/TBSP

Ranch

- 11.5 CHO DIVIDED BY 382 GRAMS = .03 CHO/GRAM
- 1 TBSP = 17 GRAMS (.03 CHO x 17 GRAMS) .51 CHO/TBSP
- ¼ CUP = 4 TBSP (.51 CHO x 4) 2 CHO/1/4 CUP
- ¼ CUP = 68 GRAMS
Instructions
- Pre heat oven to 400.
- Chop cooked turkey or chicken and set aside.
- Place cream cheese, dressing and Frank’s hot sauce in a medium bowl. Whisk until smooth and then fold in chicken.
- Place mixture in an oven proof serving dish and add grated cheese. Cover and refrigerate if making ahead.
- Bake dip for 20 – 30 minutes, until cheese is melted and dip bubbling. Cooking time will depend on serving size and type of dish (the half recipes above bake for 20 minutes each in a long flat dish.)
