Whether you have a house full of relatives and friends or the kids have had a sleepover, a Breakfast Taco Bar is a great way to feed a crowd. Get everyone to pitch in as part of their room and board or prep the night before if they are only brunch guests. Having said that, the girls love making a little individual breakfast taco on quiet mornings too. Everyone makes their own perfect taco! The sky is the limit, put out whatever you have on hand, and serve with pan fries (approx. 19 CHO/150 gr) or Tater Tots (16 CHO/9 pieces/85 gr).

Ingredients

GF Corn Tortillas (Manny’s = 10 CHO/tortilla/26 gr)

    Flour Tortillas (Old El Paso = 13 CHO/tortilla/25 gr)

      GF Hard Shell Tacos (Old El Paso = 6 CHO/shell/10.5 gr)

      • Taco Chips
      • Sausage of any kind scramble fried or in links
      • Bacon
      • Ham
      • Scrambled eggs
      • Salsa
      • Pico de Gallo
      • Cool Green Dip
      • Pickled Red Onions
      • Guacamole
      • Avocado
      • Sour Cream
      • Grated Cheddar Cheese
      • Roasted Red Peppers
      • Refried Beans/Black Beans
      • Spinach
      • Jalapeno’s
      • Cilantro
      • Chives
      • Limes

      Instructions

      1. It really is important to heat some olive oil (1 TBSP) in a non stick pan to heat the corn tortilla (both sides) and eat immediately.  So, anyone eating the soft corn tortillas may be on cooking duty unless the host is.  

        Warm flour tortillas in the microwave, several at a time in a clean dish towel, covered by another towel.  Don't stack the tortillas in the microwave but you can in the Tortilla warmer and place on the table.
