Pina Colada

Dreaming of a sunny vacation in the middle of winter? Make a Pina Colada and explore the options. One being Puerto Rico where this sweet, ice-cold drink originated. We had no fruit to garnish our drink. It was a last minute decision to make a Pina Colada on a snowy day and dream of summer fun!

We discovered Real Gourmet Cream of Coconut at our local Calgary Co-op and tried the recipe on the back. Delicious!

This recipe does make 2 gimlet glass size drinks of ½ cup each, which seems like plenty enough.

Ingredients

  • 1 cup ice
  • 3 oz (6 TBSP/45 gr) Real Gourmet Cream of Coconut (45 CHO/4 TBSP/60 ml) 67.5 CHO
  • 3 oz (6 TBSP) Del Monte Pineapple Juice (28 CHO/1 cup/250 ml) 10.5 CHO
  • 1.5 oz 3 TBSP white rum 0 CHO

TOTAL CHO 78 CHO

  • TOTAL WEIGHT 250 GRAMS
  • 78 CHO DIVIDED BY 250 GRAMS = .312 CHO/GRAM
  • EACH DRINK = 125 GRAMS (.312 CHO x 125 GRAMS) 39 CHO/DRINK

Instructions

  1. Place ice in a blender and add remaining ingredients.
  2. Blend until smooth.
  3. Pour into glasses and garnish with fruit, if desired.
  4. Serve immediately.
