Butter lettuce is our favourite lettuce for these wraps. Sweet and mild, Butter lettuce is sold with the roots still attached to preserve freshness. Quick and delicious, this dish comes together in minutes. Flavourful and light for a hot day.
Asian Chicken/Turkey Lettuce Wraps
A really low Carb meal, and many condiments now come Gluten Free, so it’s super easy! And as always, our favorite meals are build your own so Carb counting is easier.
Ingredients
- 500 gr lean ground chicken or turkey 0 CHO
- 1 tsp. Sesame oil 0 CHO
- 2 TBSP chives chopped 0 CHO
- ¼ tsp. garlic minced 0 CHO
- ½ cup (75 gr ) sliced water chestnuts, chopped (8 CHO/1/2 CUP/125 ML) 8 CHO
- 2 TBSP GF San-J Hoisin Sauce (8 CHO/TBSP) 16 CHO
- 2 TBSP GF Kikkoman Teriyaki Sauce (3 CHO/TBSP) 6 CHO
- 1 TBSP GF Tamari/Soy Sauce (1 CHO/TBSP) 1 CHO
- 1 tsp. unseasoned rice wine vinegar 0 CHO
- 1 TBSP (15 gr) ginger, grated 2 CHO
- 1 tsp. (2 gr) cornstarch 2 CHO
- 1/2 tsp. Sriracha 0 CHO
- 6 Basil leaves chopped 0 CHO
- 1 head Butter lettuce
TOTAL CHO 35 CHO
- TOTAL WEIGHT 506 GRAMS
- 35 CHO DIVIDED BY 506 GRAMS = .069 CHO/GRAM
- 1 TBSP = 10 GRAMS (.069 CHO x 10 GRAMS) .69 CHO/TBSP
- ¼ CUP = 4 TBSP (.69 CHO x 4) 2.76 CHO/1/4 CUP
Instructions
- Remove stem and roots from butter lettuce with a knife and separate leaves.
- Heat sesame oil in skillet and add ground chicken or turkey. When cooked about halfway, add garlic and chives. Continue cooking through and until there is no liquid in the pan.
- Meanwhile, in a small bowl add Hoisin, Teriyaki, Tamari, rice vinegar, ginger, Sriracha and cornstarch. Mix to incorporate and add to skillet. Continue to cook on medium/low heat.
- Add chopped water chestnuts and cook until thickened, stirring frequently.
- Add basil leaves. Stir and serve with more Sriracha if desired
