Chicken Satay
These skewers are tasty and really easy. A nice change from barbequed chicken throughout the summer, or any time of year really. Serve with Peanut Dipping Sauce for a light snack or dinner.
Ingredients
- 2 boneless chicken breasts
- ¼ tsp. minced garlic
- 2 TBSP San-J Tamari GF soy sauce (1 CHO/TBSP) 2 CHO
- 2 TBSP lemon juice
- 2 TBSP olive oil
Instructions
Mix marinade and cube chicken into 1-inch cubes. Marinate for 1 hour prior to grilling. There will be marinade that isn’t absorbed so we call this a 0 CHO.
Soak wooden skewers for 30 minutes and then thread chicken onto skewers.
Grill for 10 minutes, (depending on how hot your barbeque is) turning once after 5 minutes.
