Shrimp Scampi
I love this retro dish. The girls love shrimp, so this is an easy start to a meal or alongside Simple Tomato Sauce. In North America shrimp scampi means shrimp cooked in garlic butter. In Italy scampi is more like a lobster. Everyone has their own way of making scampi. Double everything but the shrimp if you want lots of sauce to dip fresh bread.
Ingredients
- 12 large Shrimp 205 gr 0 CHO
- 1 TBSP butter 0 CHO
- 1 TBSP olive oil 0 CHO
- ½ tsp. minced garlic 0 CHO
- 1/8 tsp. salt 0 CHO
- 1 TBSP (juice of half a lemon) lemon juice 0 CHO
- 2 TBSP fresh parsley chopped 0 CHO
- Lemon slices for garnish 0 CHO
TOTAL CHO 0 CHO
*Bread if desired, CHO depends on product you buy
Instructions
- Melt butter and olive oil. Add minced garlic. Heat the sauce pan on the stove top or grill.
- Add shrimp to hot butter mixture and sprinkle with salt. Cook for about 2 minutes.
- Shrimp will be starting to turn pink. Flip shrimp and sprinkle parsley on top. Cook about another 2 – 3 minutes, add lemon juice and remove from heat. Shrimp should be fully pink in color.
- Garnish with lemon slices and serve immediately, with fresh bread if desired.
