Bourbon Cherries

This recipe is from the RecipeGirl (recipegirl.com) found on Pinterest. It’s so good, no changes were needed. Use the cherries  in an Old Fashioned or Manhattan and the syrup over ice cream. This is half the original recipe. I make it a couple of times during cherry season.

Ingredients

  • 1/3- cup (67 gr) sugar 67 CHO
  • 2 cups (330 gr) sweet cherries pitted 46 CHO
  • 1 ¾ cup (414 ml) bourbon 0 CHO

Total CHO 117 CHO

  • Each cherry is about 13 grams before pitted and average 11 grams after 1.52 CHO each
  • The total bourbon and sugar mixture is 456 grams.
  • 67 CHO divided by 456 grams = .147 CHO/gram
  • 1 TBSP = 13 grams .147 CHO x 13 grams = 1.91 CHO per TBSP

I’ve CHO counted the cherries and juice separately because you may have cherries, juice or both.

    Instructions

    1. In a small saucepan bring sugar and bourbon to a simmer over low heat. Simmer until sugar dissolves. Turn off heat and let cool for 30 minutes.
    2. Pit cherries and place in sterilized half pint-sized mason jars (about 3). Pour cooled bourbon over cherries. Completely cover. Tighten the lids and store in the refrigerator for several months. The original recipe states can be stored for up to a year.

    3. As the cherries macerate in the bourbon, they will shrink in size. Taste will be the same. They don’t last long enough to macerate much in our house! Delicious!
