Yams
In our family, yams fall into the cauliflower category – you either love them or you don’t! Sweetened with colorful mini marshmallows a true retro dish. Loved or hated, they are a staple at our holiday meals. Our other holiday favorites include these recipes: Turkey, Turkey Gravy, Turkey Stuffing, Brining the Turkey, Potatoes, Cranberries, and Coleslaw.
Ingredients
- 1 lb yam (454 gr), peeled and cooked – 343 gr 85 CHO
- 1 TBSP butter 0 CHO
- Salt and pepper
- 60 grams colored mini marshmallows 46 CHO
TOTAL CHO 131 CHO
- TOTAL WEIGHT 400 GRAMS
- 131 CHO DIVIDED BY 400 GRAMS = .327 CHO/GRAM
- 1 TBSP = 14 GRAMS (.327 CHO x 14 GRAMS) 4.57 CHO/TBSP
- ¼ CUP = 4 TBSP (4.57 CHO x 4) 18.28 CHO/1/4 CUP
Instructions
- Peel yam and cut into 6 – 8 pieces. Cover with water and bring to a boil. Reduce heat and simmer until fork tender, 25 – 30 minutes.
- Drain and mash until smooth in texture. Stir in butter and a sprinkle of salt and pepper.
- Layer in small flat dish and cover with an even, single layer of marshmallows.
- Bake in oven at 350 until yams are warm, 20 minutes and broil a few minutes if you like the marshmallows to have a bit of golden color.
