Turkey Chili is a little leaner than beef; and we use some cumin and thyme to enhance the flavours. White kidney beans change the appearance but not the taste or CHO. This recipe is a slow cook type meal for a cool fall or winter day. If the game is on, even better!
Turkey Chili
Garnish the chili with grated cheddar, sour cream, fresh sliced jalapeno, or peppers and serve with tortilla chips or rice.
We make chili recipes with the girls in mind, and adults can add any number of spicier condiments on the side.
If making chili only for adults, absolutely add ½ tsp. cayenne and ½ tsp. red pepper flakes to start and increase the heat to your personal taste.
Ingredients
- 2.2 lb. (1000 gr) ground turkey 0 CHO
- 1 TBSP olive oil 0 CHO
- ¾ tsp. salt 0 CHO
- ½ tsp. pepper 0 CHO
- 1 cup (120 gr) red peppers, diced 6 CHO
- ½ cup (60 gr) red onion, diced 5 CHO
- 1 cup (110 gr) celery, sliced 2 CHO
- ½ tsp garlic minced 0 CHO
- 28 oz. (796 ml) diced tomatoes (5 CHO/1/2 cup/125 ml) 31.84 CHO
- 14 oz. (398 ml) tomato sauce (3 CHO/1/4 cup/60 ml) 19.9 CHO
- 2 TBSP chili powder 0 CHO
- 1 TBSP paprika 0 CHO
- 1 TBSP cumin 0 CHO
- 1 bay leaf 0 CHO
- 3 – 4 Thyme sprigs 0 CHO
- *1 – 19 oz. (540 ml) can red or white kidney beans, rinsed and drained 36 CHO

- ½ CUP = 112 GRAMS (.044 CHO x 112 GR) 4.9 CHO/1/2 CUP
- 1 CUP = 225 GRAMS (.044 CHO x 225 GR) 9.9 CHO/1 CUP
Instructions
- Pre heat oven to 300.
- Heat oil oil in a Dutch Oven and add ground turkey. Scramble fry breaking up the meat until about 2/3 cooked.
- Add chopped onions, celery, garlic, and red peppers. Continue to cook 5 – 7 minutes.
- Next add diced tomatoes, tomato sauce and spices. Stir and place thyme sprigs on top.
- Cook 2 hours, covered in oven. (Stir after 1 hour).
- After the chili has cooked 2 hours, rinse and drain beans; then add to chili. Stir beans to incorporate.
- Continue to cook for another 30 minutes, uncovered in the oven.
- Remove chili from the oven and let rest 10 minutes before serving.
- *Red and White Kidney Beans have the same CHO. We use our kitchen scale to compute the CHO rather than the can because we rinse and drain the beans.
