Strawberry and Chevre (Goat Cheese) Salad
I think of this salad every spring in strawberry season! Adapted from the Best of Bridge Series. As with most salads, plate individually for an exact carb count. Otherwise the CHO will depend on the amount of which salad ingredients you take on your plate. I use a really good syrupy Balsamic Vinegar for this recipe.
If using brown sugar, double the amount and adjust the Carbs.
Ingredients
Salad:
- 8 cups baby salad greens 0 CHO
- ½ cup (100 gr) Chevre, then crumbled 6.66 CHO
- ¼ cup (30 gr) sliced almonds or 1 TBSP Three Farmers Crunchy Little Lentils 3 CHO
- 2 cups (279 gr) sliced strawberries 15 CHO
- TOTAL CHO 24.66 CHO
Dressing:
- ¼ cup (125 ml) vegetable oil 0 CHO
- 2 TBSP (30 ml) Raspberry vinegar 0 CHO
- 1 TBSP (15 ml) Balsamic vinegar 9 CHO
- ½ tsp. (2 ml) Dijon mustard 0 CHO
- ½ TBSP (6 gr) Brown Sugar Splenda 6 CHO
- TOTAL CHO 15 CHO
- TOTAL VOLUME 1/2 CUP/125 ML
- 15 CHO DIVIDED BY 125 ML = .12 CHO/ML
- 1 TBSP = 15 ML (.12 CHO x 15 ML) 1.8 CHO/TBSP
Instructions
- Gently mix dressing ingredients and set aside.
- Place salad greens on a platter or individual dishes. Top with strawberries, crumbled goat cheese and sliced almonds. Drizzle with dressing and serve immediately.
Individual Salads:
- 2 cups baby salad greens 0 CHO
- 2 TBSP (25 gr) Chevre 1.66 CHO
- 1 TBSP (7.5 gr) sliced almonds .75 CHO
- ½ cup (69.75 gr) sliced strawberries 3.75 CHO
- 2 TBSP Dressing 3.6 CHO
- TOTAL CHO 9.76 CHO
