This is a favourite spring luncheon meal, especially when you pull out home-made Stock – Chicken or Turkey from the freezer. Only use home-made stock in this simple yet elegant starter.
Stock with Pasta and Asparagus
Some of the best meals are the simplest.
The only Carbs are in the pasta, and the asparagus tips add a gentle flavor to the broth.
Ingredients
- 2 cups home-made stock 0 CHO
- 6 asparagus tips 0 CHO
- 1 cup cooked pasta 30 CHO
TOTAL CHO 30 CHO
2 SERVINGS 15 CHO/SERVING
Instructions
Start cooking the pasta in boiling, salted water. (GF pasta may have more CHO)
- Bring stock to a low boil.
- Turn off the heat and add asparagus tips about 5minutes prior to serving the soup.
- Serve immediately.
