Standing Rib Roast is so delicious, simple is better. Elegant and worthy of a special occasion.
Cooking the roast on high heat to begin with is similar to browning the meat before cooking so that the juices are sealed in.
Ingredients
- 1 Standing Rib Roast (size dependent on your group)
- Salt and Pepper
- Garlic (optional)
Instructions
- Pre Heat oven to 450.
- Remove roast from the refrigerator for at least 1 hour before cooking, 2 hours, if you have a large roast.
- If using garlic, slice very thinly and make small slits in the meat. Place the garlic slivers in the slits and generously salt and pepper the roast.
- Place roast on a rack in the roaster and cook for 30 minutes at 450.
- Reduce heat to 350 and continue to cook roast for about 16 minutes per pound. Use a meat thermometer to check the internal temperature; rare – 120F; medium rare – 125F; and medium 130F.
- Let rest for 15 minutes before carving. The meat will continue to cook while resting. Using a good meat thermometer will help you gage the temperature and the level of rare to medium you prefer.
