Spicy Chicken Thighs

Chicken Thighs are so moist, we prefer them over chicken breasts with this rub. Let the rub rest on them for 15 minutes and up to overnight.

Spicy Chicken Thighs

We love these thighs with Roasted Potatoes, Artichokes and Blue Oyster Mushrooms. They cook alongside one another in the oven for an easy weeknight meal. Use separate sheets pans or the same one.

The spice rub is good for 2 nice sized chicken thighs, easily doubles or triples, depending on the size of your group. With the exception of the brown sugar or blend there are no Carbs so we count this as 0 CO.

Ingredients

  • 1 TBSP Paprika
  • 1 tsp. Oregano
  • 1 tsp. Salt
  • ½ tsp. Pepper
  • ½ tsp. Cayenne
  • ½ tsp. Brown Sugar or ¼ tsp. Splenda Brown Sugar Blend
  • 1 -2 TBSP Olive oil

Instructions

  1. Pre heat oven to 400.
  2. Drizzle a little olive oil on a sheet pan; enough to lightly cover the pan and spread with a pastry brush.
  3. Mix all of the spices in a small bowl and rub on dry chicken thighs. If marinating for a very short time, leave them at room temperature. If leaving overnight, place in refrigerator covered in plastic wrap.
