Spago at the Bellagio, Las Vegas

Spago has a front row seat at the Bellagio Hotel overlooking the Bellagio Fountains. Sometimes we have been lucky enough to sit outside, listen to the Fountain music and feel the mist; other times we were not so lucky.

Wolfgang Puck opened his signature “Spago” Restaurant in Beverly Hills and has since expanded to 6 other Spago locations, including Las Vegas, Saudi Arabia, Singapore, Maui, Budapest, and Istanbul.

Wolfgang’s famous House Smoked Salmon Pizza is rumoured to have been created for actress Joan Collins. Apparently, she came into the restaurant one night and ordered the Smoked Salmon Brioche, except there was no brioche. So…………he fiddled with hot pizza dough topped with smoked salmon, capers, onion, lemon, chives, and caviar. Voila!

Mike has had this countless times and swears it’s the best pizza, and it was an Oscar "After Party" food for years.

However, that’s not the focus of our last meal at Spago.

Still on the menu (thank heavens) is a dramatically presented dessert “The Spiked Lemon”.

I swooned when told it was Gluten Free. It is a culinary Masterpiece!

Layers of Yuzu Cream, Chiffon Cake and Citrus Mousse in a shell of chocolate, sprinkled with gold paper thin leaves.

Yuzu is a Japanese cream made from tangy lemon, grapefruit and oranges – very potent, only a very little is needed apparently.

It was rich enough that we shared it, and that was plenty. The Carb count? It’s hard to say really. So unknown was this dessert to any others we have had.

Our meal, including appetizers was as top notch as always. Our only comment would be to order one thing at a time, because before we finished pre dinner cocktail the appetizer arrived. And very quickly after arrived the mains.

Slow it down and enjoy the experience. Although the service was very good we felt a bit rushed and would order more slowly next time.

This isn't the fanciest or most elegant dining Las Vegas has to offer. There is a dress code and it is fun, a little boisterous and more relaxed, if that is what you are looking for.
