A really quick meal with a side salad; tasting similar to Alfredo without the prep.

Simple Ravioli

Carb counts will vary depending on your brand of Ravioli, not a low carb meal, but certainly a rich and creamy one. Gluten Free Ravioli does exist, it's just hard to find sometimes. If you see it in the freezer section, buy it! It will keep for a long time frozen.

Ingredients

  • 1 lb (454 gr) frozen Ravioli with meat filling (43 CHO/1/2 cup/100 gr) 195.22 CHO
  • 2 TBSP butter 0 CHO
  • 1 cup cream 0 CHO
  • ¼ tsp. salt 0 CHO
  • ¼ tsp. black pepper 0 CHO
  • 1 tsp. dry parsley 0 CHO
  • 1.5 cup (150 gr) mozzarella cheese shredded 0 CHO
  • 1 cup (70 gr) Parmesan Cheese 0 CHO

TOTAL CHO 195.22 CHO

  • TOAL WEIGHT 1035 GRAMS
  • 195.22 CHO DIVIDED BY 1035 GRAMS = .188 CHO/GRAM
  • ½ CUP = 115 GRAMS (.188 CHO x 115 GRAMS) 21.62 CHO/1/2 CUP

Instructions

  1. *Turn on Broiler while ravioli is cooking.
  2. Bring salted water to a boil and cook ravioli as per package directions.
  3. Meanwhile, melt butter in a skillet and add cream, pepper, parsley and salt. Bring to a boil and simmer for 5 minutes until reduced and thickened. Set aside.
  4. Drain ravioli and toss with the cream.
  5. Layer mozzarella cheese and then sprinkle with Parmesan. Broil until golden brown 5 – 10 minutes, let rest 10 minutes and serve.
