Seafood Cocktail Spread became popular with the Best of Bridge series – that became our go to cookbooks in the 70’s and 80’s. That truly was Haute Cuisine. This is our adapted version and the spread really must be made with “from scratch Cocktail Sauce“.
Seafood Cocktail Spread
We fold in the crab or shrimp to the cream cheese mixture and as much as I love mayonnaise, we leave it out! Generally we use a larger platter, a bit bigger than a dinner plate.
Ingredients
- 4 oz. (125 gr) cream cheese 8.3 CHO
- ¼ cup (57 gr) sour cream 4 CHO
- ½ cup Cocktail Sauce (double batch) (3.89 CHO/TBSP) 33 CHO
- 1 can shrimp or crab 0 CHO
- 1 cup (75 gr) Cheddar Cheese, grated 0 CHO
- Herbs to garnish
- Lemon slices to garnish
TOTAL CHO 45.3 CHO
- TOTAL WEIGHT 493 GRAMS
- 45.3 CHO DIVIDED BY 493 GRAMS = .091 CHO/GRAM
- ¼ CUP = 48 GRAMS .091 CHO x 48 GRAMS 4.36 CHO/1/4 CUP
Instructions
- Mix cream cheese and sour cream until smooth. Rinse and drain shrimp or crab. (If using crab squeeze it over the sieve so that most of the moisture is drained away.) Fold into cream cheese mixture.
- Spread the cream cheese mixture in an even layer on a platter.
Make a double batch of cocktail sauce and spread over the cream cheese.
- Top with grated cheese and garnishes.
- Cover and refrigerate until ready to serve.
