Sautéed Zucchini and Tomatoes

With the markets overflowing with produce and a neighbour with a generous crop, zucchini and tomatoes become regulars at our table.

Sauteed Zucchini and Tomatoes

Sauteing zucchini and tomatoes brings out the sweet flavor. With the addition of Parmesan Cheese, it is the perfect fall side dish.

The number of tomatoes and zucchini will depend on the people you are serving. It is a rich side dish, and this amount works for 2 of us. Regardless it is very low carb.

Ingredients

  • 1 (100 gr) small zucchini, sliced into ½ inch rounds 3 CHO
  • 6 – 10 (70 gr) grape tomatoes, sliced in half 2 CHO
  • ¼ cup 20 gr Parmesan Cheese, grated 0 CHO
  • 1 – 2 TBSP butter 0 CHO
  • Black pepper 0 CHO

TOTAL CHO 5 CHO

  • 2 SERVINGS = 2.5 CHO EACH

Instructions

  1. Cut tomatoes and zucchini rounds.
  2. Melt butter in a medium skillet over medium high heat.
  3. Add zucchini and sauté on one side until starting to warm and become golden, about 3 minutes.
  4. Add tomatoes, cut side down.
  5. Add few grinds of pepper to both tomatoes and zucchini.
  6. Flip zucchini and add grated Parmesan on top of the zucchini.
  7. Sauté until zucchini cooked through but not wilted and tomatoes warmed.
  8. Serve immediately.
