Pork Roast with Wild Blueberry Jam

Wild Blueberry Jam with no added sugar actually tastes like blueberries. This sweet and savoury sauce is perfect with pork roast. We imagine it would be equally as good with a whole roasted chicken.

Pork Roast with Wild Blueberry Jam

Good friends Carol and Allan served this one evening many decades ago, and it has become a family favorite.

Regular jam has a lot of sugar; so, we were delighted to find Smuckers jam with no added sugar that works with about 1/3 less Carbs! The good news is a little sauce goes a long way – big on flavor – 1 or 2 TBSP is lots for drizzling!

Ingredients

  • 3 – 4 lb pork roast or whole chicken 0 CHO
  • 1 cup (250 gr) Smuckers No Sugar Wild Blueberry jam (5 CHO/1 TBSP/15 ml) 83.3 CHO
  • 1/3 cup (82 gr) Minute Maid frozen orange juice concentrate (7 CHO/TBSP) 35 CHO
  • *1/3 cup pineapple juice (33 CHO/250 ml) 11 CHO
  • ¼ cup Gluten Free soy sauce (1 CHO/TBSP) 4 CHO
  • ½ tsp. grated onion 0 CHO
  • ¼ tsp. minced garlic 0 CHO
  • Salt and pepper 0 CHO
  • 2 TBSP olive oil 0 CHO

TOTAL CHO 133.3 CHO

  • TOTAL WEIGHT 400 GRAMS
  • 133.3 CHO DIVIDED BY 400 GRAMS = .333 CHO/GRAM
  • 1 TBSP = 16 GRAMS (.333 CHO x 16 GRAMS) 5.32 CHO/TBSP
  • ¼ CUP = 4 TBSP (5.32 CHO x 4 21.28 CHO/1/4 CUP)
  • ¼ CUP = 64 GRAMS

Instructions

  1. Pre heat oven to 350.
  2. Drizzle olive oil over roast and sprinkle with salt and pepper.
  3. Cook roast uncovered until internal temperature is 145 – 150, about 35 minutes/lb (depending on your oven).
  4. Meanwhile, combine the sauce ingredients in small saucepan. Bring to a boil, reduce heat and simmer for 5 minutes, pretty much stirring constantly.
  5. Remove about ¼ cup sauce and set aside for basting. Cover remaining sauce and reheat prior to serving.
  6. Baste pork 2 – 3 times, with reserved sauce, during the last 30 minutes of cooking time.
  7. Remove roast when internal temperature has been reached from the oven and let rest for 15 minutes prior to slicing.
  8. Serve remainder of sauce on the side with Roasted Rosemary Potatoes or rice. We like to serve this dish family style, with the potatoes/rice, vegetable of season and orange slices.
  9. *Orange juice works just as well if you don’t have pineapple juice.
