Pork Back Ribs

This is a simple meal to make. The pork back ribs are slow cooked in the oven and then crisped up on the barbeque. Serve over a bed of saffron rice and seasonal vegetables. Pork Back ribs are more tender and meatier than side ribs, so they do cost more.

Ingredients

  • 1 rack of pork back ribs 0 CHO
  • Water 0 CHO
  • *2 TBSP Kinder’s Sweet and Smokey Barbeque sauce (7CHO/TBSP) 14CHO

Buy as many racks of ribs as you will need and increase barbeque sauce proportionately.

    Instructions

    1. Pre heat oven to 225.

      Cut rack in half and lay flat in a casserole dish or roasting pan. Cover with 1/2 inch water.

      Cover with lid or tin foil and bake for 1.5 hours.

      Remove ribs from pan and toss with barbeque sauce. Grill for 10 minutes until crispier.

      Each half rack should have 1 TBSP barbeque sauce making it 7 CHO per half rack. Cut ribs in sets of 2 and serve with lots of napkins.

      *At the beginning of summer buy a good barbeque sauce and enjoy. Kinder’s is Gluten Free.
