Marry Me Chicken

This recipe, adapted from the New York Times went viral on Tik Tok. It is super easy, and a take on Tuscan Chicken, which has been around forever. The flavours are big – delicious and we can see why it is a big deal meal!

Marry Me Chicken

We love this dish with Elsie’s Potatoes or Rosemary and Garlic Roasted Potatoes, but cook up any starch of your choice to rest the chicken and sauce on.

We usually have packaged sun-dried tomatoes rather than the ones packed in oil. If you do have the oil packed, drain on a paper towel before slicing and adding them.

This is one of those recipes that it is best to count the Carbs per serving, rather than try to determine CHO in the sauce, because the cornstarch is on each piece of chicken. That’s where most of the Carbs are.

Ingredients

  • 3 chicken breasts or 6 boneless thighs 0 CHO
  • Salt 0 CHO
  • Pepper 0 CHO
  • ¼ cup (32 gr) cornstarch 28 CHO
  • 2 TBSP olive oil 0 CHO
  • 2 TBSP butter 0 CHO
  • ¼ tsp. garlic, minced 0 CHO
  • ½ tsp. oregano, dried 0 CHO
  • 1/8 tsp. red pepper flakes 0 CHO
  • 2 TBSP (30 gr) Tomato paste 4 CHO
  • 2 cup chicken stock 0 CHO
  • 1 cup cream 0 CHO
  • 3 TBSP (21 gr) sun dried tomatoes, thinly sliced 9 CHO
  • 1 cup (75 gr) Parmesan Cheese, grated 0 CHO

TOTAL CHO 41 CHO

    2 SERVINGS = 20.5 CHO EACH

      3 SERVINGS = 13.66 CHO EACH

        4 SERVINGS = 10.25 CHO EACH

          Instructions

          1. Cut chicken breasts in half (if using), pat dry, and lightly salt and pepper each side.
          2. Place cornstarch on a plate and dredge each piece of chicken. Remove chicken to another plate until ready to sauté.
          3. In a large skillet, heat olive oil and butter. When butter melts and skillet is hot, sear the chicken until each side is golden, about 5 minutes per side.
          4. Remove chicken to a dish, reduce heat and add tomato paste. Stir and add oregano, red pepper flakes and garlic.
          5. Add chicken stock, stir up any brown bits and simmer until reduced by half, about 10 minutes.
          6. Once stock has reduced, add cream and sun-dried tomatoes. Simmer gently for 10 minutes until sauce has thickened.
          7. Add Parmesan Cheese and stir until cheese melts.
          8. Place chicken back in the skillet to warm and serve immediately.
          9. Leftovers the next day are just as delicious.
