Fire up the grill! These skewers are perfect for a summer meal!
Lime Pork Skewers
These skewers are delicious with Cool Green Dip and really easy to make.

Ingredients
- 3 lb pork tenderloin 0 CHO
- Salt and pepper
Marinade
- ½ tsp. Minced garlic
- 3 tsp. (10 gr) Cumin
- Zest (3 gr) of one large lime
- 2 TBSP (30 ml) fresh lime juice
- 1/3 cup (80 ml) olive oil
- TOTAL CHO 0 CHO
Instructions
- Cut tenderloin across into 3 - 4 segments, and then cut into strips, 2 inches long, ½ inch thick.
- Combine marinade ingredients and place in large zip lock bag with pork. Shake well to coat and place flat in refrigerator for 2 - 4 hours.
- Soak bamboo skewers for 30 minutes and thread pork. Grill or broil for 8 - 10 minutes, turning once. Depending on the size of your skewers and personal preference about how well cooked you like pork, cooking time many vary slightly. Some in the family would say to skip the skewers and fast fry the pork.
