Korean Beef Lettuce Wraps

Thinly sliced beef tenderloin is quickly marinated in a salty-sweet marinade sauce, grilled and then rolled with rice, herbs and vegetables in a crisp romaine lettuce leaf. Ssam means “wrap” in Korean. This is so delicious, it is company worthy, even though it is street food.

The marinade does have some Carbs, so we take a guess and say half remain on meat, while the other half is discarded.

We make Sushi Rice, but feel free to make whatever type you like. Sushi Rice is tossed with unseasoned rice vinegar, salt and sugar = sticky.

Depending on appetites, this could be an appetizer or a meal for 2, 3 or 4 people.

Ingredients

Beef:

  • 1 lb. (454 gr) beef tenderloin 0 CHO
  • 3 TBSP Gluten Free Soy Sauce 2 CHO
  • 1 TBSP (12 gr) sugar 12 CHO
  • ¼ cup Gluten Free beer 2 CHO
  • 1 TBSP (6 gr) green onion 0 CHO
  • ¼ tsp garlic minced 0 CHO
  • ½ tsp pepper 0 CHO
  • 2 tsp. sesame oil 0 CHO
  • 2 tsp. (12 gr) honey 12 CHO
  • 1 pear (65 gr after peeled and grated) 8 CHO

TOTAL CHO 36 CHO

  • *RICE CHO NOT INCLUDED
  • 2 PERSON USING HALF THE CARBS = 9 CHO
  • 3 PERSON USING HALF THE CARBS = 6 CHO
  • 4 PERSON USING HALF THE CARBS = 4.5 CHO

Sides:

  • Romaine lettuce leaves
  • Carrots, thinly sliced
  • Green onion, thinly sliced
  • Cilantro, chopped
  • Basil, chopped
  • Cucumber, cut into match sticks
  • Lime wedges
  • Rice
  • Radish, thinly sliced
  • Thai chili peppers, thinly sliced
  • Serrano peppers, thinly sliced

Instructions

  1. Prepare the sides you prefer before starting the beef and marinade. If making Sushi rice, make that well ahead and let cool to room temperature.
  2. Thinly slice beef into strips about 1” wide by 2” long.
  3. In a small dish of saucepan, add the marinade ingredients except pear. Warm in the microwave or stove top until the honey dissolves; but do not boil.
  4. Peel and core pear. On a large, course box grater, grate the pear and add to marinade.
  5. Pour marinade over beef and let rest for 15 minutes.
  6. In the meantime, fire up the grill to high, about 425 – 450.
  7. Drain marinade in a sieve, leaving some of the grated pear on the beef.
  8. In a grill grate place beef, without crowding and grill about 2 – 3 minutes per side.
  9. Serve immediately and let everyone build their own wraps.
