A quick main with 0 Carbs and big flavour!
Chicken breasts can take on so many different flavors from so many different countries. Here we spice them up with a little curry and paprika. An easy weeknight meal, the chicken breasts rest with the rub while the Saffron Rice comes together.
Ingredients
- 2 – 3 chicken breasts 0 CHO
- 1 tsp. Paprika 0 CHO
- 1 tsp. Curry 0 CHO
- 2 TBSP olive oil 0 CHO
- Salt and pepper to taste 0 CHO
- Parsley to garnish 0 CHO
TOTAL CHO OCHO
Instructions
- Cut each chicken breast in half and then again in half crosswise, so that you have 4 similar sized, thin pieces of chicken from each breast. Lightly salt and pepper each breast.
- Mix paprika and curry together in a small bowl and sprinkle on both sides of the chicken breasts. Let chicken rest with the rub for up to an hour while Saffron Rice cooks.
- Add 2 TBSP olive oil to cast iron frying pan and heat. Sear chicken on both sides until done.
