Curried Chicken Breasts

A quick main with 0 Carbs and big flavour!

Chicken breasts can take on so many different flavors from so many different countries. Here we spice them up with a little curry and paprika. An easy weeknight meal, the chicken breasts rest with the rub while the Saffron Rice comes together.

Ingredients

  • 2 – 3 chicken breasts 0 CHO
  • 1 tsp. Paprika 0 CHO
  • 1 tsp. Curry 0 CHO
  • 2 TBSP olive oil 0 CHO
  • Salt and pepper to taste 0 CHO
  • Parsley to garnish 0 CHO

    Instructions

    1. Cut each chicken breast in half and then again in half crosswise, so that you have 4 similar sized, thin pieces of chicken from each breast. Lightly salt and pepper each breast.
    2. Mix paprika and curry together in a small bowl and sprinkle on both sides of the chicken breasts. Let chicken rest with the rub for up to an hour while Saffron Rice cooks.
    3. Add 2 TBSP olive oil to cast iron frying pan and heat. Sear chicken on both sides until done.
