Comox Camembert
Certainly, the Natural Pastures Cheese Company stands out as a culinary experience. In business for 20 years, they have 20 unique cheeses. They are in located in Courtney and there is an Artisan cheese Shop on site.
The Natural Pastures Cheese Company website lists all retail stores across 8 provinces.In general, Camembert is more intense in flavour than Brie. Camembert has deeper, earthier notes while Brie is creamy and buttery. Both have bloomy rinds, edible and downy white.
Son and Chef Jobert first introduced us to this fabulous cheese.
Once summer arrives one of our favourite ways to entertain is with charcuteries or cheese boards. Depending on weather guests are dropping by or staying the evening determines the size. Comox Camembert is one of our favourites especially served with a dry sparkling wine as an aperitif or part of dessert.
Let it rest on the counter for at least 30 minutes and serve with anything you like. As part of a huge display charcuterie or very simple. You will not be disappointed.
As it sits at room temperature, the cheese becomes more soft, creamy and slides much like a slow delicious volcano.
Recipe Notes
Hands down we loved a dry Brut Champagne or Sparkling.
If you prefer a Rose, choose a very dry one, and any crisp white works, as compared to a Chardonnay. Leave that for the Brie.
