Chicken Parmesan

Decades ago, when diagnosed with Celiac’s, there were very few bread options. So, we changed a family favorite and left the bread crumbs off the chicken. It became the new normal and again a family favorite, saving calories and carbs! We have calculated the CHO for the sauce after the Parmesan cooks down with the cheeses; and have counted the chicken as 0 CHO; removing it from the calculation.

Ingredients

  • 4 boneless skinless chicken breasts (713 gr after seared) 0 CHO
  • 1 - 680 ml can (710 gr) Hunt’s Tomato Sauce (5 CHO/1/2 cup/125 ml) 27.2 CHO
  • 2 cups (149 gr) grated fresh Mozzarella or Cheddar Cheese 0 CHO
  • 1 cup (70 gr) grated Parmesan Cheese 0 CHO

TOTAL CHO - SAUCE 27.2 CHO

  • TOTAL WEIGHT AFTER COOKED - CHICKEN 713 GRAMS
  • TOTAL WEIGHT (1648 GRAMS – CHICKEN: 713 GRAMS) = 935 GRAMS

SAUCE:

  • 27.2 CHO DIVIDED BY 935 GRAMS =. .029 CHO/GRAM
  • ¼ CUP = 63 GRAMS (.029 CHO x 63 GRAMS) 1.82 CHO/1/4 CUP
  • ½ CUP = 125 GRAMS (.029 CHO x 125 GRAMS) 3.62 CHO /1/2 CUP

Instructions

  1. Pre heat oven to 350
  2. Heat oil in frying pan.  Season both sides of chicken with salt and pepper. Sear chicken on both sides, 3 minutes per side, over high heat.

  3. Spread 1 cup tomato sauce in bottom of a lasagna style pan. Add chicken in single layer and pour remaining sauce over chicken. Sprinkle grated cheese and top with parmesan cheese.
  4. Bake covered with tin foil for 40 minutes until golden brown. Remove tin foil, keeping chicken on middle rack and turn on broiler. Broil for 5 minutes and remove from oven.
  5. Serve with pasta (CHO in addition to sauce).
