Caprese Bruschetta

This appetizer is a must when everything summer is at its best! Fresh basil and sweet tomatoes top melted bocconcini.

Caprese Bruschetta

Because of the small portion of tomatoes and cheese, the only real Carbs are in the bread, choose a good hearty Artisan loaf and enjoy.

Ingredients

  • ¼ cup olive oil
  • 1 garlic clove minced

*4 slices bread – CHO dependent on your product

  • 4 cherry tomatoes
  • 2 medium bocconcini balls
  • 8 – 12 fresh basil leaves
  • 2 slices prosciutto torn

Instructions

  1. Mix olive oil and garlic in a small dish and set aside. (This can be made earlier in the day.)
  2. Pre heat broiler and place bread slices on cooking sheet. Brown one side, flip and brown the other. Spread garlic olive oil over one side of toasted bread, add sliced bocconcini and broil until melted and slightly golden.
  3. Remove to serving platter, top with fresh tomato slices, basil and prosciutto.

Recipe Notes

*If making Gluten Free, use “Udi’s” hotdog buns. They seem to hold up better as compared to any dinner rolls or French baguette style bread.
