Many years ago, a very Italian family shared this recipe with us. It is now one of our family favourites….extra virgin olive oil and fresh lemons do really make a difference!
Broccoli and Cauliflower Salad
So low in carbs it hardly counts. Delicious and perfect for the summer barbeque!
Ingredients
- ½ lb (227 gr) fresh broccoli, cut into small florets 9 CHO
- ½ lb (227 gr) fresh cauliflower, cut into small florets 6 CHO
- ¼ cup (30 gr) thinly sliced red onion 3 CHO
- 1 cup (70 gr) Grated Parmesan 0 CHO
TOTAL CHO 18 CHO
- TOTAL WEIGHT 600 GRAMS
- 18 CHO DIVIDED BY 600 GRAMS = .03 CHO/GRAM
- ¼ CUP = 53 GRAMS (.03 CHO x 53 GRAMS) 1.59 CHO/1/2 CUP
Dressing
- 4 TBSP olive oil
- 4 TBSP fresh lemon juice
- ½ tsp. salt
- ½ tsp. pepper
- Lemon rind to garnish
Instructions
- Cut broccoli and cauliflower into small pieces.
- Make dressing and set aside.
- No more than an hour before serving, toss vegetables with dressing, red onion and grated Parmesan.
