With the commencement of school, it’s been a challenge to keep Blood Glucose levels within range, coupled with the stress of a new fall start and staying healthy; away from any number of virus’. Here’s a quick basic breakfast slider, that can be adapted to include any number of things in the eggs or the bun. You can special order sliders from Cob’s Bakery and freeze them. Care Bakery makes Gluten Free dinner rolls that are frozen and work just fine warmed or toasted. The CHO comes from the slider, everything else is carb free, given the amount per serving.

Ingredients

4 slider buns CHO DEPENDENT ON YOUR PRODUCT

  • 4 eggs 0 CHO
  • ¼ cup spinach chopped 0 CHO
  • 1 TBSP butter 0 CHO
  • 4 GF Turkey Farmer Sausage Patties 0 CHO
  • ½ cup grated cheddar cheese. 0 CHO

Other slider ideas:

  • Bacon
  • Egg Whites
  • Mushrooms cooked
  • Onions cooked
  • Roasted peppers

Instructions

  1. Spray frying pan with oil and cook turkey sausage patties over medium heat, turning after 5 minutes. Cook another 5 minutes until cooked through.
  2. Meanwhile melt butter over medium heat, in non-stick 8-inch frying pan. Crack eggs into a small bowl, add salt and pepper. Whisk until lighter in colour and add to buttered frying pan.
  3. Stir eggs with a spatula, scraping up cooked egg bits. When eggs are about 2/3 cooked, add chopped spinach and stir to incorporate. Mound eggs in center of pan, about 1 inch thick. Sprinkle with grated cheese and cover with lid. Reduce heat to low until cheese melts.
  4. Cut eggs into 4 pieces and add to slider with a sausage patty and any other garnishes/condiments you wish.
