Queso means cheese in Spanish and possibilities are endless when you start melting cheese. This recipe includes ground beef and Salsa so it’s easy… simple and cheesy delicious. Definitely Friday night finger food to go with the nachos…no matter the weather!
Beef Queso Dip
A family favorite; spice it up with some Guacamole Style Salsa Verde on the side, if you want. The girls like it a little milder, so it’s easier for us to add the heat!
Ingredients
- 1 TBSP olive oil 0 CHO
- 1 lb. (454 gr) hamburger 0 CHO
- (108 gr) Velveeta Cheese (4 CHO/30 GR) 24 CHO
- (90 gr) Fresh Mozzarella, grated (1 CHO/30 GR) 3 CHO
- 1 cup (263 gr) Tostitos Medium Salsa (1 CHO/2TBSP) 8 CHO
- ¼ cup chicken stock 0 CHO
- Jalapeño to garnish
- Cilantro or black olives to garnish
- *Serve with Delicious Foods Guacamole Style Salsa 5 CHO/2TBSP

- 35 CHO DIVIDED BY 814 GRAMS = .042 CHO/GRAM
- ¼ CUP = 56 GRAMS (.042 CHO x 56 GRAMS) 2.35 CHO/1/4 CUP
Instructions
- Heat oil in skillet and scramble fry hamburger until cooked through. Drain.
- Place cooked hamburger, salsa and cubed Velveeta cheese in a small saucepan. Stir and add chicken stock. Slowly heat so that cheese melts. Stir occasionally to incorporate.
- Grate or rip apart fresh mozzarella cheese.
- When Velveeta cheese has melted add handfuls of grated fresh mozzarella. Gently stir until all cheese has melted.
Garnish as desired and serve with Guacamole Style Salsa Verde, nachos and any other tortilla chip condiments you can think of.
