This salad was adapted from The New York Times article about Chef Mark Icon and his pizza restaurant, Lucali. Reminiscent of the leftover salad enjoyed with family on Sunday. Iceberg lettuce is sprinkled with marinated tomatoes, celery, red onions and canned olives. A pizza house staple.
Lucali Salad (Italian House Salad)
Carb counting some salads is very tricky. The marinated tomatoes and vegetables do have CHO, while the lettuce does not. This makes a substantial salad, enough for 4 – 6 people as a side salad.
The Chef suggests serving as a side to pasta or topped with meatballs. We have served it with Oregano Shrimp, Chicken Milanese and Chicken Parmesan.

Ingredients
- 3 -5 (300 gr) Roma tomatoes, quartered or cut into 6’ths 9 CHO
- ¼ cup (30 gr) red onion, slivered 3 CHO
- ½ cup (55 gr) celery, thinly sliced 1 CHO
- 25 canned pitted black olives 5 CHO
- 2 TBSP olive brine 0 CHO
- ¼ cup olive oil 0 CHO
- 2 TBSP red wine vinegar 0 CHO
- ½ tsp. salt 0 CHO
- ¼ tsp. pepper 0 CHO
- *½ large head iceberg lettuce 0 CHO
Dressing:
- ¼ cup olive oil 0 CHO
- 2 TBSP red wine vinegar 0 CHO
*TOTAL CHO SALAD WITHOUT LETTUCE 18 CHO
- TOTAL WEIGHT 596 GRAMS
- 18 CHO DIVIDED BY 596 GRAMS = .03 CHO/GRAM
- ½ CUP = 104 GRAMS (.03 CHO x 104 GR) 3.12 CHO/1/2 CUP
Instructions
- Cut tomatoes into quarters or 6ths.
- Sliver the red onion and celery. Cut the olives in half.
- Place tomatoes, red onion, celery and olives in a medium dish. Mix olive brine, olive oil, red wine vinegar, salt and pepper. Drizzle over tomato mixture and gently toss to coat.
- Let marinate for 2 hours on the counter, tossing occasionally.
- Mix dressing and set aside.
- When ready to serve; cut or tear iceberg lettuce into pieces.
- Place lettuce on a serving platter or in individual salad bowls. Add tomatoes and drizzle some dressing. (If you do not want to use some or all the dressing, serve on the side so everyone can choose how much they prefer.)
- This really is similar to a pizza place house salad!
