Baked Potatoes are called Jacket Potatoes in the UK and when topped with chili these are hearty enough to be the main meal. Start with a salad and a crisp vinaigrette.

Depending the crowd, we serve Chili Con Carne or Turkey Chili, both work equally well.
Chili Baked Potatoes
Potatoes do carry a lot of Carbs with them, so it’s important to be aware and go from there.
Use Russet potatoes, they are the best for baking.
Ingredients
177 gr Russet potato, baked 34 CHO
228 gr Russet potato, baked 44 CHO
- Salt and pepper 0 CHO
- Butter 0 CHO
- Sour cream (1 CHO/TBSP/15 GR)
- Chili Con Carne (7.74 CHO/1/2 CUP/123 GR)
- Turkey Chili (4.9 CHO/1/2 CUP/112 GR)
- Cheddar Cheese grated 0 CHO
- Green onions chopped 0 CHO
- Bacon cooked and chopped 0 CHO
- Jalapenos seeded and chopped 0 CHO
- Cilantro or Parsley 0 CHO
- Hot Sauces 0 CHO
- Red Pepper flakes 0 CHO
Instructions
- Pre heat oven to 400 and cook as many potatoes as you need. Try to find potatoes about the same size so Carb counting is easier.
- Pierce each potato with a fork and set in oven for 45 – 60 minutes, until cooked through.
- Remove potatoes from oven and let rest a few minutes before serving.
- Cut potatoes in half almost the whole way through.
- With a fork fluff the potato flesh a bit and sprinkle with salt and pepper. Add a little butter.
- Then start to build your potato with anything desired.
